**What I’m loving & learning is a series where I share all of the things I’m, you guessed it, loving and learning in the past week. It’s really a sneak peek into how I spend my time, and is a fun way for me to reflect. I was really busy at work this week, so I savored my downtime even more than normal! I didn’t have as much time to cook, but still came up with a few fun bowls where I basically throw everything in my fridge into a bowl and devour.

New this week! I included some of the skincare products I love. I use the EWG’s Skin Deep database to find products I like.

FOOD

Nothing crazy going on in the food world this week, but have still been enjoying whipping up some 30 minute or less meals. Here’s a bit of what I’m loving. When I polled in IG you said you were interested in seeing more FOOD, so I’ll try sharing some of my favorite meals.

  • Snack: Medjool dates stuffed with almond butter & chocolate chips
  • Inspo: I love Balance With B’s easy, healthy recipes. They always mimic some of my favorite comfort foods but with feel-good ingredients
  • Put this Shit On Everything: Nutritional Yeast (great for a cheesy flavor) & Coconut Aminos (douse rice bowls, tastes like soy)
  • Japanese Sweet Potatoes are less sweet, white, sweet potatoes. You can cook these any way you like, but I really like them simply steamed. I put them with eggs, on salads, or just drizzle (ok dump) tahini on them.
  • My friend Nina’s Beef Ragu (delish & comfy)
  • This Dig Inn veggie box was delivered to my door in just 45 minutes AND I was easily able to donate $10
